At dawn, Fulton Market is a rollicking corridor of brute sensation. Ham-fisted men in long white coats and rubber boots emerge from foggy meat lockers with skinned goats slung over their shoulders. Greenhorns hose down the bloody pavement with bleach and water. Gnat-like forklifts load towering pallets onto idling refrigerated semis. The air is thick with the smell of diesel and dead fish.
